The Executive Sous Chef (ESC) reports directly to the Chef de Cuisine and indirectly to the Executive Chef. The ESC supervises the cooks alongside the Chef de Cuisine and Sous Chefs. This role requires strong leadership and management skills, quick decision making, the ability to take on our culture to guide problem solving, and running the kitchen when leadership is out. Menu development demands a modern, progressive approach with a focus on seasonality and technique. Collaboration, communication, and integrity are compulsory within our team.
Responsibilities include but are not limited to:
– Leadership and management of kitchen team
– Recipe development for Supper Club and Tasting Room that dovetails with our style, creativity, and current menus
– Serve as Chef in Tasting Room
– Guest interactions
– Inventory ordering and management
– Manage supplier relationships
– Budget management, mathematics skills
– Computer skills with MS Office, primarily Excel
– Communicate with morning sous daily for needed prep
– Food safety standards
– Equipment maintenance oversight
– Employee schedules
– Training; new employees, promoting positions, new dishes and techniques
– Assist Chef de Cuisine and Chef in staff reviews
– Discipline staff as necessary within our standards
– Monitoring the line
– Creating a positive and disciplined kitchen culture
– Ensures the quality and consistency of the products daily
– Exhibit clear and regular communication with staff
– Communication and teamwork with FOH managers and serving staff
– Ensure the leadership is informed of any challenges or concerns that impact the restaurant or team
– Demonstrate integrity, positivity, and respect in all interactions
– Caring for your mental and physical health to enable your ability to thrive in a high-volume kitchen and work with grace under pressure.
