Jr. Sous Chef Full Time

Pubbelly Sushi, an Award winning Asian-inspired gastropub is looking for an experienced Jr. Sous Chef to join our team at our Dadeland location.
Candidates must be able to work night, weekends and holidays. This is a management position.

POSITION TITLE: Jr. Sous Chef

REPORTS TO: Head Chef

POSITION SUMMARY: To guarantee the quality and proper standards as well maintaining culinary production and quality levels as set by Pubbelly Group. Will assist the Head Chef and Sous Chef in all areas of kitchen production and operations.

DUTIES AND RESPONSIBILITIES: The following are intended as basic requirements. Success will come to the individual that is able to expand upon these job requirements. These requirements may change over the course of employment.

Assures adherence to restaurant standards of food quality, preparation, and recipes
Assists in the overseeing of all kitchen operational areas
Supervises the proper setting up of each item on menus and insures their readiness
Oversees the seasonings, portions, and appearance of food served in the operation
Stores unused food properly to minimize waste and maximize quality
Follows proper staffing guidelines and prepares production sheets
Plans and requisitions food as needed; discusses requisitions with Head Chef
Assures proper safety, hygiene, and sanitation practices are followed
Assures a smooth kitchen operation by coordinating with related Food and Beverage Departments
Consults with individual outlet’s supervisor daily about specials, rotation of product, and any upcoming special events
Prepares a list of perishable items on a daily basis at each outlet to insure proper rotation and utilization
Adheres to Pubbelly Sushi’s Standard Operating Procedures
Assures proper safety, hygiene, and sanitation practices are followed
Quantity and Quality control must be consistent with pars as set by the Head Chef
Ensures quality of product and presentations throughout service

Minimum Qualifications
Culinary Degree;1- 3 years Japanese cuisine experience
1-3 years management experience required
Strong cooking and production skills
Ability to run shifts, train team members and run inventory / place orders

Job Type: Full-time

Pay: $42,000.00 – $50,000.00 per year
