Sous Chef Needed! Full Time

Sous Chef Responsibilities:

Primary Qualifications:
Fully vaccinated against COVID19
2+ years of relevant management experience
Proficient in Pizza and Dough-Making a significant plus
Proficient in Pasta Making
Minimum 2 years of line cook experience
Proficient in administrative duties
Understanding of mathematics to cost and scale recipes
As an ambassador for Roberta’s, always conduct yourself professionally in all work environments. You are the representative of our company both inside and outside of the work realm

Ordering:
Daily ordering for all kitchens from our many vendors based on pars that change weekly and seasonally.
Develop professional relationships with vendor reps and partnering farms

Line Skills:
Fast, clean and organized at all times
Flexibility to work any station in the restaurant in both kitchens (prep, expo, colds, pasta, grill, deck, slapping, oven and new stations as they are created

Administrative:
Comfortable using Google Drive and email
Maintains clear and consistent communication with professional and prompt responses to emails, texts, etc.
Daily professional correspondence with directors and owners
Schedule writing and time card review as needed
Attend weekly sous chef meetings

Menu Development:
This is the fun part! We’re constantly talking about dish ideas, so have ideas ready. Maybe it’s just one ingredient or a new technique – you never know what will inspire the next great dish
Understanding what makes a dish a “Roberta’s” dish
Oversee all cost analysis and quality of food production
Understand costing, pricing, and sales goals for kitchens.

Department of Health Compliance:
Have a food handler’s license
Set the standards for safe work habits and DOH compliance
Full understanding of all kitchen’s two-minute drill
Prepare the entire kitchen staff for a DOH inspection and manage the staff during inspection
Ability to walk inspectors through during a visit

Coaching:
Stay focused but make it fun
Ensure teamwork and proper communication with the front of house staff
Build a culture of collaboration and problem solving amongst the management team
Comfortable administering disciplinary action reports/coach and council pull-asides

Off-site:
With multiple openings planned in the next few years, there is a lot of possibility
Flexibility to travel domestically and internationally (up to two months) for openings, consulting, and pop-ups.
Maintain a valid passport at all times
